Vegg French Toast

I like mine crispy

I’m still super excited about the Vegg, a vegan egg replacer with the flavor of a hen’s egg., and following my success with scrambled veggs I tried out this simple french toast recipe.

Ingredients

8 tsp vegg yolks blended according to directions on packet

1 cup soy milk

1/2 teaspoon salt & pepper

6-7 slices of sour dough

Directions

Whisk the prepared vegg yolk with milk and salt and pepper. Dip both sides of the sour dough into the mixture so that the pores of the bread can absorb the eggy goodness. The mixture is rather thick so give it a few minutes on each side. Fry both sides in some vegan butter on a medium-low heat. It will take longer than you expect if you want the sides crisp and the innards cooked ~ 5/7 minutes each side. If you want the bread gooey on the inside fry for less time.

I ate the french toast with some vegan sausages and wilted spinach, and will probably add some savory herbs to the mixture next time around. If you prefer your french toast sweet, add some nutmeg and cinnamon to the mixture and forget the pepper. French toast goes smashingly well with maple syrup, bananas or berries and vegan ice-cream.
