Sweetened Condensed Soy Milk

It has been a while since I published a post since I am now back in America.  I am excited to share my sweetened condensed soy milk recipe.  It can be used in any recipe in place of the canned/bottled condensed milk such as my Thai Iced Tea recipe or even a tres leches cake!  You can control the sweetness, which is what I really appreciate about making my own.  I hope you give it a try :-)

Condensed Soy Milk

Sweetened Condensed Soy Milk

Servings: makes about 1 1/2 cups

Ingredients:

- 3 1/2 cups sweet soy milk ( I used organic vanilla soy milk, if in Korea use Vegemil B)

- 4 Tbls (1/4 cup) sugar, more if you want it sweeter (up to 3/4 cup of sugar, but that would be very sweet)

Directions

1) Add the soy milk and sugar to a pan, stir to combine.

2) Bring to a boil, then reduce heat to medium-low and simmer for 25-30 minutes or until the soy milk has reduced to half the original amount and has a syrup-like consistency.  Stir it frequently to reduce a film building on top.  You should end up with about 1 1/2 cups.

3) Strain the condensed soy milk through a fine strainer to remove lumps, optional.

*If the milk gets too thick, you can add a little soy milk to thin it out.

For 1 serving (2 Tbls): 48 Calories, 0.9 g Fat, 0 g Saturated Fat, 0 mg Cholesterol, 36.5 mg Sodium, 8.5 g Carbohydrates, 0 g Fiber, 7.1 g Sugars, 2 g Protein.  *Nutrition will vary based on soy milk used and amt of sugar.

***For reference- 2 Tbls of regular sweetened condensed milk has almost 125 calories and 22 g of Sugar!!
