Korean Blackbean Sauce Noodles (Jajangmyeon)

These delicious noodles are a take-out favorite in Korea.  This dish is really easy to make at home and you get to control the quality of the ingredients.  You can also use the sauce over rice instead of noodles if you prefer.

Korean Blackbean Sauce Noodles (Jajangmyeon)

Servings: 3

Ingredients:

- 1 bundle (2 servings) of fresh wheat noodles

-1 turkey burger patty, smashed up (or lean ground beef /pork if you can’t find turkey)

-1/2 onion, diced

-1 carrot, diced small

-4 to 5 garlic cloves, minced

-1 tsp sesame oil

For Sauce:

-2 cups water

-4 Tbls blackbean paste (chunjang)

-1 tsp beef stock seasoning

-1/4 tsp ground black pepper

-2 tsp sugar

-1 Tbls cornstarch

Directions

1) Mix the sauce ingredients together, set aside.

2) Steam and carrots for about 3-5 minutes until they are tender.

3) In a pan, saute the ground turkey, onions, garlic, and carrots in abou 1 tsp oil for about 2-3 minutes.  Add the sauce mix and let simmer for 10-15 minutes until the sauce thickens.

Jajangmyeon Sauce

4) Boil the noodles for about 5-7 minutes until they are tender. Strain and return to the pot.

5) Mix the noodles with the sesame oil and set aside.

Cooked Wheat Noodle

6) Put your noodles in a bowl and top with the thick sauce.

Below are the ingredients used in the recipe.  You can find all the ingredients at Home Plus, except the turkey burgers, which are usually at Costco, but I haven’t seen them since the summer.
