Healthy Kimchi Burritos

In this fusion recipe, kimchi fried rice and Korean marinated chicken come together to make a deliciously unique burrito.

Servings: 3

Ingredients:

- 1 cup cooked brown rice (or white if you prefer), cooled

-1/2 cup fresh kimchi (try to get some from a local restaurant, the stuff in the packages at the grocery store is terrible!)

-2 tsp sesame oil

-2 chicken breasts, diced

-1/4 cup bulgogi marinade, store-bought (or homemade, see recipe below)

-1 tsp canola oil

-2/3 cup shredded lettuce

-2 green onions, chopped (optional)

-3 burrito size tortillas, warmed

-Topping – I recommend low-fat plain yogurt, low-fat sour cream, black sesame dressing or kiwi dressing (this ones is really good!)

Homemade Bulgogi Marinade

-1 Tbls minced garlic, about 1 large clove or 2 small

-1 1/2 Tbls soy sauce (low sodium)

-1 Tbls dark rice syrup

-2 tsp sugar

-1 Tbls rice wine

-1 Tbls juice – orange, apple, or Asian pear (Asian pear is traditional, I used apple)

-2 tsp sesame oil

-1 green onion, chopped thin

-1/2 tsp ground black pepper

*Mix all ingredients together

Directions

1. Marinate the chicken for at least 30 minutes or overnight.

2. Remove the chicken from the marinade and saute the chicken in a little canola oil for about 2-3 minutes per side until it is no longer pink inside.  Remove the chicken from the pan and set aside.

3. Add the sesame oil the the pan along with the kimchi and rice.  Saute for about 2-3 minutes until everything is combined and warmed through.

4. Make your burritos by putting about 1/3 cup of the kimchi rice, 1/3 of the chicken, some lettuce, green onions, and dressing of your choice in a warmed tortilla.

Below are the ingredients used in the recipe.  The kimchi can be found at most Korean restaurants (sometimes I take some home in a baggie after I eat Korean BBQ :-) ) The tortillas can be found at Costco in the freezer section and the remaining ingredients can be found at home plus or your local mart.
