Chicken Caesar Wrap

This is a light and fresh way to start the new year.  With a homemade low-fat Caesar dressing – that’s better than store-bought, fresh greens, and protein rich chicken breasts, this recipe won’t disappoint.

Servings: 2

Ingredients:

-2 chicken breasts

-1/2 tsp olive oil

-salt & pepper

-2 cups salad greens ( I used green leaf and spinach)

-1/2 cucumber, peeled and sliced (optional)

-2 Tbls parmesan cheese, grated (fresh is the best, but I used the canned kind)

-Croutons or French’s Fried Onions (optional, for added crunch)

-2 burrito size wraps or tortillas (whole wheat is preferred, but use what you can find/like)

For the Caesar Dressing:

-1/3 cup or 1 container (85 g ) plain low-fat yogurt (use Denmark brand if in Korea)

-2 Tbls lemon juice

-2 tsp Worcestershire sauce (or soy sauce)

-1 tsp fish sauce (this is important if you want the classic Caesar taste without anchovies)

-1 tsp Dijon mustard

-1 Tbls grated Parmesan cheese (the canned stuff actually works the best here)

-1 or 2 cloves of garlic, minced

-1/4 tsp ground black pepper

Directions

1) Brush the chicken breasts with the olive oil and sprinkle a little salt and pepper on each.

2) Bake at 215 degrees Celcius for about 18-20 minutes until they are firm to the touch and no longer pink in the center.  Wrap the chicken in foil and let rest for 10 minutes after baking to let the juices soak-in.  Then, slice into thin strips against the grain.

3) Mix the dressing ingredients together with a whisk and set aside.  The dressing can be made up to a day in advance.

4) Put your wrap together by getting a warm tortilla and filling it with lettuce, cucumber, 1 chicken breast, 1/3 -1/4 of the dressing, and 1 Tbls of the parmesan cheese.
