Almond Butter Pudding Cake

Yet another Pudding Cake recipe…

The perfect time to try out your homemade Roasted Sweet Almond Butter, or as I used, A Lower Calorie Nut Butter. If you don’t have either of these, you can sub any other butter of choice. I often make this recipe with homemade cashew butter as well.

Like all my pudding cake recipes, this makes an excellent high protein, low carb, high fibre filling and yummy moist cake. It makes a very generous portion size for the calorie stats- for about 160 calories, you get 19 grams of protein and 9 grams of fibre! I like to make really low cal cakes because then you can top them with some extra indulgent toppings- like more almond butter, homemade yogurt (as I did in these pictures), chocolate chips, protein pudding, coconut cream… however you like!


Almond Butter Pudding Cake:

2 cups egg whites
72 grams (8tbsp) coconut flour
60 grams lower calorie almond butter (or regular nut butter of choice *note, to get the same nutrition stats as me, you would need to use only 30g of regular nut butter)
1 tbsp Stevia glycerite, or sweetener of choice (this equates to about 1/3 c sugar)
1 tsp vanilla
1 tsp cinnamon
1 tsp guar gum
2 tsp baking powder
1/2 tsp salt
2-4 cups tea

1. Blend egg whites and nut butter in food processor (or with mixers).
2. Combine dry ingredients and add to liquid. Blend.
3. Add tea in 1/2 cup increments until a thin batter consistency.
4. Pour into parchment lined pans and bake at 350 for 20-30 mins until done. Alternatively, you can cook in the microwave- either in deep bowls or on plates, as I did. However, you will end up with more of a cookie-type cake. For microwave cooking, cook 5-10 minutes, flipping once halfway.

abc*A note about the Nutrition Info: Please note that I do not add small things like vanilla, cinnamon, baking powder etc. Not to say they don’t have calories, but I don’t bother adding them in to my calculator. Also, I choose to use MyFitnessPal, because that way you can see the information from the ingredients that I used, and can make your own changes accordingly.
