Sweet Potato Cookie-Blondies

_MG_0898Okay these aren’t real cookies, but I’ve been calling them cookies in my head for months now, so I’m going to continue to call them cookies. You have my permission to change the name or think otherwise. REGARDLESS, they are good. And cookie-like. Or maybe blondie-like. I don’t really know, I didn’t grow up eating blondies… yes okay cookie-blondie like. Aha! A much better name!

Cauliflower Bread Two Ways

After my recent wonderful discovery on Gmarket for frozen cauliflower (see here), I was dreaming of ways to use it. When I was back home in Canada for a whirlwind visit this August, I had my mom make me a cauliflower bread because I hadn’t had cauliflower in over a year, and had been salivating over all these wonderful recipes I had seen. Most cauliflower bread recipes call for cottage cheese, which I haven’t really seen here, so I needed to try out my own way.

Who am I?

Who am I?

Well, I’m just your average 24-year old Canadian teaching English in Korea, finding my way through food, fitness and a foreign culture. Trying to figure out what I’m meant to do, what I have to share and how I want to live a life of fulfillment. Originally,  I dreamed that photography would be my goal, and so I pursued art school, and graduated with a BFA, Major in Photography from the Emily Carr University of Art+Design in Vancouver, BC. Upon completion of my school in 2010, I set out with hope and passion, excited to begin my new career as an aspiring photographer.

Unbelievable Pillowy Egg “Bread”

Bread is a treat that I generally do not include in my diet. It was never allowed on my plan during my competition training, and so it’s not something I’ve really reincorporated into my life. Don’t get me wrong- I think bread is incredibly delicious! But here, in Korea, they don’t even have the bread I would choose anyways. Korean bread is all that white, sweet, processed, insulin-spiking stuff. Not something I want.

Enter my egg bread.
