Homemade Cheesy Bean and Rice Burrito

My no. 1 craving in Korea is Taco Bell’s Cheesy Bean and Rice Burrito.  The only Taco Bells in Korea are in Seoul or on the American military bases and since I don’t have access to those places, I had to create my own.  The good news is that it is healthier than Taco Bell!  The combination of the zesty sauce, creamy beans, and Mexican rice in this recipe creates the Taco Bell taste.

For the Rice

-1/2 cup uncooked short grain brown rice (or white if you prefer)

-1 1/2 cups whole wheat flour

-1/2 cup white wheat flour

-3/4 tsp salt

-2 tsp baking powder

-1/2 tsp baking soda

-1 1/2 tsp ground cinnamon

-1/4 tsp ground nutmeg (optional)

-1 1/2 cups mashed steamed squash (see ‘Canned’ Pumpkin recipe)

-3/4 cup brown sugar

These slice and bake cookies look elegant and are easy to make.  They are delicious served with hot chocolate!

-1/2 cup butter (1 stick), at room temperature (soft)

-1 1/4 cups sugar

-1/3 cup milk, at room temperature

-1 egg

-2 tsp vanilla extract (or 5-7 drop of vanilla concentrate)

-1/2 tsp baking soda

-1/4 tsp salt

-1 1/2 cups whole wheat flour

-1 1/4 cups white wheat flour

-2 Tbls cocoa powder

-3 Tbls mini chocolate chips

-sugar (for sprinkling)


1) Cream the butter and sugar together in a bowl.

Easy as Pumpkin Pie

This pie recipe features a velvety pumpkin filling, an easy homemade cookie crust, and a coconut whipped cream topping.  The base for the filling is tofu, but it still tastes just as rich and creamy as traditional pumpkin pie!

For Crust:

-15 Diget Cookies (also called Digestives, you could use ginersnaps as well – yummy)

-4-5 Tbls milk (any kind, I used low-fat)

-1 tsp ground cinnamon

-1/2 tsp ground ginger

For Pie Filling:

Super Easy Pumpkin Spice Latte

This super simple recipe uses instant pumpkin tea and coffee mixes to create my favorite cold weather coffee-shop specialty.

Servings: 1


-2 packets Maxim 1/2 calorie coffee mix (Mocha Gold or Original)

-1/2 packet Korean pumpkin tea mix (I found it was too thick if I used a whole packet)

-1/4 tsp cinnamon

-a pinch (1/16) tsp nutmeg (if you can find)

-1/8 tsp ground ginger

-1 tsp instant coffee granules (optional- if you want a stronger coffee flavor, which I like)

-2 Tbls milk (optional, adds a richer flavor)

- 200 ml (just over 3/4 cup) hot water


Unbelievable Pillowy Egg “Bread”

Bread is a treat that I generally do not include in my diet. It was never allowed on my plan during my competition training, and so it’s not something I’ve really reincorporated into my life. Don’t get me wrong- I think bread is incredibly delicious! But here, in Korea, they don’t even have the bread I would choose anyways. Korean bread is all that white, sweet, processed, insulin-spiking stuff. Not something I want.

Enter my egg bread.

Honey-Garlic Teriyaki Sauce

This homemade teriyaki sauce has a balance of sweet and salty.  It has a thick syrupy consistency, unlike some store-bought kinds that are thin like soy sauce.  It is perfect as a marinade or as a dipping sauce.  I like to serve this sauce with  Steamed Mandu & Veggies (Korean dumplings).

-3/4 cup soy sauce (low-sodium preferred)

-3/4 cup rice wine

-1/3 cup brown sugar

-2 Tbls honey

-1 Tbls soybean paste

-1 Tbls sesame oil

Fish and Coconut Cream Soup

I love soup.. especially anything with a coconut base!

Rosemary-Honey Whole Wheat Pizza Dough

This is a versatile pizza dough which I use for all my pizza recipes.  You can also use it to make bread sticks.

-1 pkg instant yeast

-1/4 tsp sugar

-1 cup warm water, divided

-1  1/2 cups whole wheat flour

-1/2 cup + 2 Tbls  white wheat flour

-3/4 tsp salt

-1 Tbls dried crushed rosemary

-2 Tbls ground flax seed (optional)

-4 tsp olive oil

-2 Tbls honey
