Keep Calm & Bake Macarons

12 Nov 2015 | Seoul, South Korea —

The first time I had macarons was way back in February 2012. I tried them at a well-known, yet overrated dessert shop in Davao, right after Danny and I had dinner. They had bright yellow, orange and green colors, which are very unlikely used by other bakeries. Since then, I developed a love for this delicate pastry, though I haven’t tasted the perfect one ever yet.

Holy “Energy Balls” from Kansas!

Getting packages is always nice but its pretty much awesome when you get one while abroad from friends and family back home. Today I received a “welcome back to Busan” care package from Nicole’s best friend Nicole and her husband Nick in Kansas. A very thoughtful combo of ingredients was included for me to make my own “Energy Balls” from scratch. She also included some taco seasoning, which as many of us Soko dwellers know is not an easy find.

The healthy recipe is pictured below for those who have a sudden hankering for balls….Energy Balls. Thanks again guys, you are most excellent!

Weekend Muffin Tops

Waking up a few hours before Adam, I was able to try out a recipe for Chocolate Chunk Muffins that I have been eyeing all week. I hadn’t looked at the ingredients in advance, but I do have basic baking “stuff” in the house.

CHRISTMAS TREATS Part I

Hello Readers,

It's about 6:11 in the morning here. I've been up since 2:30am after finally getting to bed at around 11pm. I slept for about 3 hours before I woke up and felt that sleep had already left me for the day.

Some of you know already, but as for the rest of you who don't I have an announcement:

I AM BACK IN AMERICA

It was a difficult decision to make, but it was the best decision and I find myself feeling more positive about my future here back in the USA. I have more opportunities to grow and pursue greater things especially in this next year in regards to continuing my education. If I would have remained in Korea my options would have remained few and the windows of opportunity to pursue my dreams small.
